  • 1 cup fresh raspberries (or frozen, if fresh is not available)
  • 1/4 cup chia seeds
  • 1/2 cup freshly squeezed lemon juice (about 46 lemons)
  • 1/2 cup honey or agave syrup (adjust to taste)
  • 4 cups water (divided into 3 cups and 1 cup)
  • Ice cubes (for serving)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Rinse the chia seeds under cold water in a fine mesh strainer. In a medium bowl, combine the rinsed chia seeds with 1 cup of water. Stir well and let sit for 15-20 minutes until they form a gel-like consistency, stirring occasionally.
  2. Rinse fresh raspberries under cold water and remove stems. In a blender, add the raspberries and 1 cup of water. Blend on high until smooth. Optionally, strain through a fine mesh sieve for a smoother texture. Taste and add honey or agave syrup if desired, blending again.
  3. In a large pitcher, combine the freshly squeezed lemon juice and the remaining 2 cups of water. Add the raspberry puree and stir well. Incorporate the honey or agave syrup, starting with 1/2 cup, and stir until fully dissolved.
  4. Once the chia seeds have gelled, stir them to break up any clumps. Add the chia seed mixture to the pitcher and stir gently to combine. Taste and adjust sweetness or tartness as needed.
  5. Fill glasses with ice cubes and pour the chia raspberry lemonade over the ice. Garnish with fresh raspberries and mint leaves if desired. Serve immediately and enjoy!

Notes

  • Store any leftover lemonade in an airtight container in the refrigerator for up to 3 days. Stir before serving, as chia seeds may settle.
  • Feel free to experiment with different fruits or add sparkling water for a fizzy version. Fresh ginger can also be added for an extra zing.
