- 1 pound (450g) boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 1/2 cup breadcrumbs (preferably panko for extra crunch)
- 2 large eggs
- 1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Cut the chicken breasts into small, bite-sized pieces (about 1-inch cubes). Use a food processor to finely chop the chicken for a cohesive mixture.
- In a large mixing bowl, combine the chopped chicken with shredded cheddar and grated Parmesan cheese. Add flour and breadcrumbs, then crack in the eggs. Mix in chopped parsley, minced garlic, onion powder, paprika, and salt and pepper. Combine until thick and well mixed.
- Form the mixture into small patties (2-3 inches in diameter) using a cookie scoop or your hands. Place them on a plate or baking sheet lined with parchment paper. Refrigerate for about 30 minutes to firm up.
- Heat vegetable oil in a large skillet over medium heat until hot. Fry the fritters in batches (4-5 at a time) for 3-4 minutes on one side until golden brown. Flip and fry for another 3-4 minutes until cooked through and crispy. Transfer to a plate lined with paper towels to drain excess oil.
- Serve the fritters warm with your favorite dipping sauce, such as ranch or spicy aioli.
