- 4 boneless, skinless chicken breasts
- 2 cups fresh broccoli florets
- 1 cup ranch dressing (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Drizzle chicken breasts with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper. Rub the seasonings into the chicken.
- Heat a cast iron skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
- Boil salted water and blanch broccoli florets for 2-3 minutes until bright green. Transfer to ice water to stop cooking, then drain.
- Place seared chicken back in the skillet and arrange blanched broccoli around it.
- Pour ranch dressing evenly over the chicken and broccoli.
- Sprinkle shredded cheddar cheese over the ranch-dressed chicken and broccoli.
- Bake for 25-30 minutes until chicken reaches 165°F (74°C) and cheese is bubbly and golden.
- Use a meat thermometer to ensure chicken is cooked through.
- Let the dish rest for 5 minutes, then garnish with fresh parsley if desired. Serve directly from the skillet or plate individually.
