  • 1 oz simple syrup
  • 2 oz gin (or vodka)
  • 4 oz soda water
  • Ice cubes

Instructions

  1. Wash the calamansi fruits thoroughly under running water to remove any dirt or impurities.
  2. Cut each calamansi in half using a sharp knife.
  3. Extract the juice from each half using a citrus juicer or reamer, aiming for about 2 ounces of juice. Strain through a fine mesh sieve to remove seeds and pulp.
  4. In a small saucepan, combine equal parts of granulated sugar and water (1 cup each for a larger batch).
  5. Heat over medium heat, stirring until the sugar completely dissolves (about 3-5 minutes). Do not boil.
  6. Remove from heat and let cool. Store any leftover syrup in an airtight container in the refrigerator for up to a month.
  7. In a cocktail shaker, combine the fresh calamansi juice, simple syrup, and gin (or vodka). Adjust syrup to taste.
  8. Fill the shaker with ice cubes and shake vigorously for 15-20 seconds.
  9. Strain the mixture into a tall glass filled with ice cubes.
  10. Top off the glass with soda water (about 4 ounces) and gently stir to combine.
