- 1 oz simple syrup
- 2 oz gin (or vodka)
- 4 oz soda water
- Ice cubes

Instructions
- Wash the calamansi fruits thoroughly under running water to remove any dirt or impurities.
- Cut each calamansi in half using a sharp knife.
- Extract the juice from each half using a citrus juicer or reamer, aiming for about 2 ounces of juice. Strain through a fine mesh sieve to remove seeds and pulp.
- In a small saucepan, combine equal parts of granulated sugar and water (1 cup each for a larger batch).
- Heat over medium heat, stirring until the sugar completely dissolves (about 3-5 minutes). Do not boil.
- Remove from heat and let cool. Store any leftover syrup in an airtight container in the refrigerator for up to a month.
- In a cocktail shaker, combine the fresh calamansi juice, simple syrup, and gin (or vodka). Adjust syrup to taste.
- Fill the shaker with ice cubes and shake vigorously for 15-20 seconds.
- Strain the mixture into a tall glass filled with ice cubes.
- Top off the glass with soda water (about 4 ounces) and gently stir to combine.
- Garnish with a slice of calamansi on the rim and fresh mint leaves if desired.
- Serve immediately while cold and fizzy.
