  • 2 cups of water or vegetable broth

  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of shredded lettuce
  • 1/2 cup of shredded cheese (cheddar or Mexican blend)
  • 1/4 cup of fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional: sour cream or Greek yogurt for topping

Instructions

  1. In a medium saucepan, combine 1 cup of brown rice and 2 cups of water or vegetable broth.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 45 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes.
  5. Fluff the rice with a fork and set it aside.
  6. In a large skillet, heat a tablespoon of olive oil over medium heat.
  7. Add the diced red onion and sauté for about 2-3 minutes until it becomes translucent.
  8. Add the minced garlic and diced red bell pepper. Sauté for another 3-4 minutes until the peppers are tender.
  9. Add the black beans and corn. Stir everything together and let it cook for about 5 minutes.
  10. Sprinkle in the cumin, chili powder, salt, and pepper. Stir well to combine and cook for an additional 2 minutes.
  11. In a large bowl, add a generous scoop of the cooked brown rice as your base.
  12. Spoon the sautéed vegetable and bean mixture over the rice, spreading it evenly.
  13. Add a handful of shredded lettuce on top of the veggies.
  14. Scatter the halved cherry tomatoes and diced avocado over the bowl.
  15. Sprinkle shredded cheese on top.
  16. Garnish with fresh cilantro and squeeze a lime wedge over the top.
