- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing (optional, for drizzling)
- 1/4 cup green onions, chopped (for garnish)
- Salt and pepper to taste
- Olive oil (for drizzling)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers thoroughly. Slice the tops off each pepper and remove the seeds and membranes. Drizzle the outside with olive oil and sprinkle with salt and pepper. Place them upright in a baking dish.
- In a large mixing bowl, combine the cooked shredded chicken and buffalo sauce. Mix well until the chicken is fully coated. Add the softened cream cheese and mix until combined. Stir in the shredded cheddar cheese and season with salt and pepper to taste.
- Fill each pepper with the buffalo chicken mixture, packing it in gently. Top with extra cheddar cheese.
- Cover the baking dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Let the peppers cool for a few minutes. Garnish with chopped green onions and drizzle with ranch dressing if desired. Serve warm and enjoy!
