Ingredients
Scale
- 2 cups of water (for tea)
- 2 tablespoons of black tea leaves (or 2 black tea bags)
- 1/2 cup of brown sugar (for tea)
- 1 cup of whole milk (or any milk of your choice)
- 1/2 cup of tapioca pearls (boba)
- Ice cubes (optional)
- Pinch of salt (optional)
Instructions
- Boil 4 cups of water in a medium-sized pot. Once boiling, add the tapioca pearls and stir gently to prevent sticking.
- Cook the pearls according to package instructions (usually 5-10 minutes) until they are translucent and chewy.
- Remove from heat and let the pearls sit in the hot water for an additional 5 minutes.
- Drain the pearls in a fine mesh strainer and rinse under cold water to stop cooking and remove excess starch.
- In a small bowl, mix the cooked tapioca pearls with 2 tablespoons of brown sugar. Set aside.
- In a separate pot, bring 2 cups of water to a boil. Remove from heat and add black tea leaves or tea bags.
- Steep for 5-7 minutes, depending on desired strength. Strain the tea leaves or remove tea bags.
- While warm, add 1/2 cup of brown sugar to the tea and stir until dissolved. Optionally, add a pinch of salt.
- Let the sweetened tea cool to room temperature, or refrigerate for 15-20 minutes.
- In a small saucepan, heat 1 cup of whole milk over medium heat until warm (not boiling). Stir occasionally.
- Remove from heat and froth the milk if desired. Optionally, mix in a teaspoon of brown sugar until dissolved.
- In a tall glass, add a generous amount of sweetened tapioca pearls.
- If desired, fill the glass with ice cubes.
- Pour the cooled sweetened tea over the tapioca pearls and ice, filling halfway.
- Gently pour the warm milk over the tea for a layered effect.
- Stir gently to combine, being careful not to disturb the pearls too much.
- Serve immediately with a wide straw.
Notes
- Use strong black tea like Assam or Ceylon for the best flavor.
- Modify the amount of brown sugar to your taste; consider other sweeteners like honey or agave syrup.
- Almond, oat, or coconut milk can be used for a dairy-free option.
- Add vanilla extract, matcha powder, or cinnamon for unique flavors.
- Store leftover tapioca pearls in a sealed container at room temperature for up to a few hours.
