  • 4 large eggs
  • 1 cup diced potatoes (preferably Yukon Gold)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onion
  • 1/2 cup cooked and crumbled breakfast sausage (or bacon)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Wash the potatoes thoroughly and dice them into small cubes (about 1/2 inch). Chop the bell peppers and onion into similar-sized pieces.
  2. In a skillet over medium heat, cook the sausage until browned and fully cooked (about 5-7 minutes). Remove from the skillet and set aside, leaving the drippings in the pan.
  3. Shred the cheddar cheese if using a block. Pre-shredded cheese is fine, but freshly shredded melts better.
  4. In the same skillet, add 2 tablespoons of olive oil and heat over medium until shimmering.
  5. Add the diced potatoes to the skillet, season with salt and pepper, and cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Cover for the first 5 minutes for extra crispiness.
  6. Stir in the diced onions and bell peppers, cooking for an additional 5-7 minutes until softened and fragrant.
  7. Add the cooked sausage back into the skillet, mixing well and cooking for another 2-3 minutes to meld the flavors.
  8. Use a spatula to create four small wells in the mixture for the eggs.
  9. Crack an egg into each well. Alternatively, scramble the eggs in a bowl and pour them over the mixture.
  10. Cover the skillet with a lid and reduce heat to low. Cook for 5-7 minutes, or until the egg whites are set and yolks are still runny.
  11. Sprinkle shredded cheddar cheese over the top and cover again for 1-2 minutes until melted.
  12. Remove from heat and sprinkle with freshly chopped parsley or chives for added color and freshness.
  13. Serve the breakfast skillet hot, either family-style or plated individually.
  14. Serve with crusty toast or sliced avocado, and add salsa or hot sauce for extra flavor.
