  • 1 tablespoon pure vanilla extract
  • 1 cup whole milk, at room temperature
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream the softened butter and granulated sugar on medium speed until light and fluffy (about 3-5 minutes).
  5. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  6. Gradually add the dry mixture to the butter mixture, alternating with the milk, starting and ending with dry ingredients. Mix until just combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  10. In a medium bowl, combine powdered sugar, heavy cream, and vanilla extract. Beat until smooth and creamy.
  11. Adjust the frosting consistency with more cream if needed, and add more vanilla for flavor if desired.
  12. Level the tops of the cakes with a serrated knife if domed.
  13. Place one cake layer on a serving plate and spread frosting on top.
  14. Place the second layer on top of the frosted first layer and press gently.
  15. Use remaining frosting to cover the top and sides of the cake.
  16. Add sprinkles, fresh fruit, or edible flowers for decoration (optional).
