  • 1 pound of beef (flank steak or sirloin), thinly sliced against the grain
  • 2 cups of broccoli florets
  • 1 tablespoon of vegetable oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 1/4 cup of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of cornstarch
  • 1/2 cup of beef broth or water
  • 1 tablespoon of sesame oil
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, sesame oil, and sugar. Add the thinly sliced beef and mix well to coat. Let marinate for at least 15 minutes, or up to an hour in the refrigerator for deeper flavor.
  2. Bring a pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes. Drain and transfer to a bowl of ice water to stop cooking. Once cooled, drain again and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add vegetable oil and let it heat until shimmering. Add the marinated beef in a single layer, searing for 2-3 minutes without stirring. Once browned, stir and cook for an additional 1-2 minutes until just cooked through. Remove from skillet and set aside.
  4. In the same skillet, add more oil if needed, then add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the blanched broccoli and stir-fry for about 2 minutes.
  5. Return the cooked beef to the skillet along with any accumulated juices. Pour in the beef broth (or water), scraping up any browned bits from the bottom. Stir and let simmer for 2-3 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper as needed.
  6. Once the sauce has thickened, remove from heat. Serve the beef and broccoli stir fry over cooked rice or noodles. Drizzle with extra sesame oil and garnish with sesame seeds or sliced green onions if desired.
