- 4 boneless, skinless chicken breasts
- 1 cup BBQ sauce (your favorite brand or homemade)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 hamburger buns
- 1 cup coleslaw (store-bought or homemade)
- Pickles (optional, for topping)
- Fresh cilantro or parsley (for garnish, optional)
- 2 cups shredded green cabbage (for homemade coleslaw)
- 1 cup shredded carrots (for homemade coleslaw)
- ½ cup mayonnaise (for homemade coleslaw)
- 1 tablespoon apple cider vinegar (for homemade coleslaw)
- 1 tablespoon sugar (for homemade coleslaw)
Instructions
- In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add chicken breasts, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Preheat your grill to medium-high heat.
- Remove chicken from marinade and place on the grill. Cook for 6-7 minutes on one side, then flip and cook for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
- In the last few minutes of grilling, brush BBQ sauce over the chicken and close the grill lid to caramelize the sauce.
- Remove chicken from the grill and let it rest for 5 minutes.
- In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour dressing over cabbage and carrots, tossing to coat. Refrigerate until ready to use.
- Toast hamburger buns on the grill or in a toaster oven until golden brown.
- After resting, slice the chicken into strips or shred it.
- On the bottom half of the toasted bun, place grilled chicken, a spoonful of BBQ sauce, and a scoop of coleslaw. Add pickles if desired.
- Optionally garnish with fresh cilantro or parsley. Place the top half of the bun on the sandwich and serve immediately.
