- 8 oz. linguine or spaghetti pasta
- 1 lb. shrimp, peeled and deveined
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Vegetable oil for frying
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha (optional, for extra heat)
- 2 tbsp green onions, chopped (for garnish)
- 1 tbsp sesame seeds (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
- Drain the pasta in a colander and rinse under cold water to stop the cooking process. Set aside.
- In a medium bowl, pour buttermilk over the shrimp, ensuring they are well-coated. Let marinate for 15-20 minutes.
- In another bowl, mix flour, cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper.
- Remove shrimp from buttermilk, allowing excess to drip off. Dredge in the flour mixture, ensuring full coverage. Shake off excess flour and set aside.
- In a large skillet, pour enough vegetable oil to cover the bottom (about 1/4 inch deep). Heat over medium-high until it reaches 350°F (175°C).
- Add coated shrimp in batches to the hot oil, frying for 2-3 minutes on each side until golden brown. Use a slotted spoon to remove and place on a paper towel-lined plate.
- In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha (if using) until well combined.
- In a large mixing bowl, combine cooked pasta and fried shrimp. Gently toss to distribute shrimp evenly.
- Drizzle Bang Bang sauce over the pasta and shrimp mixture. Toss until well coated.
- Transfer to a serving dish and sprinkle with chopped green onions and sesame seeds.
- Enjoy warm, optionally with lime wedges on the side.
