Ingredients
Scale
- 1 pound of bacon, chopped
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 pound ground beef
- 4 cups beef broth
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 cup shredded carrots
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/4 cup chopped green onions (for garnish)
- Optional: hamburger buns, for serving
Instructions
- In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy, about 8-10 minutes. Stir occasionally for even cooking.
- Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain. Leave the bacon grease in the pot for flavor.
- Add the diced onion to the pot and sauté for about 5 minutes until translucent and fragrant.
- Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
- Add the ground beef, breaking it up with a wooden spoon, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Pour in the beef broth, then add the diced potatoes and shredded carrots. Stir to combine.
- Season with Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper. Stir well.
- Bring the soup to a boil over high heat, then reduce to low and simmer for 15-20 minutes until the potatoes are tender.
- Stir in the heavy cream for a rich texture.
- Gradually add the shredded cheddar cheese, stirring continuously until melted and fully incorporated.
- Stir in the crispy bacon.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with chopped green onions. Optionally, serve with toasted hamburger buns for dipping.
- Enjoy your delicious Bacon Cheeseburger Soup!
