  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (or semi-sweet)
  • Optional: 1/4 cup chopped nuts (like walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond butter and coconut sugar. Mix until well combined and smooth.
  3. Add in the honey (or maple syrup), egg, and vanilla extract. Mix until fully incorporated.
  4. In a separate bowl, whisk together the baking soda and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the dark chocolate chips (and nuts if using).
  7. (Optional) Cover the bowl with plastic wrap or transfer the dough to an airtight container and refrigerate for at least 30 minutes.
  8. Line a baking sheet with parchment paper.
  9. Scoop out portions of dough and roll them into balls (about 1.5 inches in diameter).
  10. Place the cookie dough balls on the prepared baking sheet, leaving about 2 inches of space between each one.
  11. (Optional) Gently press down on the tops of the cookie dough balls to flatten them slightly.
  12. Bake for 10-12 minutes, until the edges are lightly golden and the centers remain soft.
  13. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
