- 1/2 cup coconut sugar (or brown sugar)
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (or semi-sweet)
- Optional: 1/4 cup chopped nuts (like walnuts or pecans)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the almond butter and coconut sugar. Mix until well combined and smooth.
- Add in the honey (or maple syrup), egg, and vanilla extract. Mix until fully incorporated.
- In a separate bowl, whisk together the baking soda and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the dark chocolate chips (and nuts if using).
- (Optional) Cover the bowl with plastic wrap or transfer the dough to an airtight container and refrigerate for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Scoop out portions of dough and roll them into balls (about 1.5 inches in diameter).
- Place the cookie dough balls on the prepared baking sheet, leaving about 2 inches of space between each one.
- (Optional) Gently press down on the tops of the cookie dough balls to flatten them slightly.
- Bake for 10-12 minutes, until the edges are lightly golden and the centers remain soft.
- Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
- Chilling the dough is optional but recommended for better texture and flavor.
- Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 3 months.
