- 4 boneless, skinless chicken breasts
- 1 cup of sliced mushrooms
- 1 cup of cooked bacon, chopped
- 1 cup of shredded Monterey Jack cheese
- 1 cup of shredded cheddar cheese
- 1/2 cup of honey mustard dressing
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- Mix garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Rub the mixture over the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown.
- Set the seared chicken aside on a plate.
- In the same skillet, sauté sliced mushrooms for 3-4 minutes until tender.
- Stir in chopped bacon and cook for an additional 2 minutes.
- Pour honey mustard dressing over the mushroom and bacon mixture, stirring to combine.
- Place seared chicken breasts in a large baking dish in a single layer.
- Spoon the mushroom and bacon mixture evenly over each chicken breast.
- Sprinkle shredded Monterey Jack and cheddar cheese over the chicken and toppings.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly and golden brown.
- If necessary, continue baking for an additional 5-10 minutes.
- Remove from oven and let rest for 5 minutes.
- Optionally, sprinkle with freshly chopped parsley.
- Serve hot with your favorite sides.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
