  • 1 cup of sliced mushrooms
  • 1 cup of cooked bacon, chopped
  • 1 cup of shredded Monterey Jack cheese
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of honey mustard dressing
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  3. Mix garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Rub the mixture over the chicken breasts.
  4. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown.
  5. Set the seared chicken aside on a plate.
  6. In the same skillet, sauté sliced mushrooms for 3-4 minutes until tender.
  7. Stir in chopped bacon and cook for an additional 2 minutes.
  8. Pour honey mustard dressing over the mushroom and bacon mixture, stirring to combine.
  9. Place seared chicken breasts in a large baking dish in a single layer.
  10. Spoon the mushroom and bacon mixture evenly over each chicken breast.
  11. Sprinkle shredded Monterey Jack and cheddar cheese over the chicken and toppings.
  12. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly and golden brown.
  13. If necessary, continue baking for an additional 5-10 minutes.
  14. Remove from oven and let rest for 5 minutes.
  15. Optionally, sprinkle with freshly chopped parsley.
  16. Serve hot with your favorite sides.
  17. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
